Simple Sautéed Zucchini – Quick, Easy & Delicious

Simple Sautéed Zucchini is the perfect side to practically any meal. Zucchini is one of my go-tos when it comes to adding some green for my dinner plate. Whenever I don’t know what to add for that green with dinner, I love when I see a zucchini in my produce drawer. And although its technically a fruit (I know, weird) my family still considers it a vegetable, so we go with that!

This recipe is way too easy but extremely delicious as well. Why wouldn’t you make this your meal?! Here’s how you do it. Wash your zucchini, and slice the top and end off. You don’t need to peel zucchini, the skin is actually super nutritious. Slice the zucchini in half, lengthwise, once – right down the middle. Place each half flesh side down on a cutting board and slice into about 1″ thick half moons. See image below for shape I’m talking about. I love eating zucchini this way, anything smaller gets too mushy when cooking and anything bigger is simply too big of a bite.

Toss the zucchini halfmoons into a bowl with 1 tablespoon of olive oil, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Toss to coat all pieces.

Heat a small skillet on high heat. Let heat for about 5 minutes so it gets hot! When the zucchini hits the pan it should loudly sizzle, this is good! Let cook while tossing every minute. If you aren’t good at tossing food on the skillet, stirring it with a spoon works just as good. Cook for about 5-6 minutes until zucchini is well browned but not burned. Serve and enjoy your Simple Sautéed Zucchini!

Ingredients
  

  • 1 zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Wash and dry zucchini.
  • Trim off stem and ends. Slice in half, lengthwise.
  • Place each half flesh side down on a cutting board and slice into 1″ half moons.
  • Toss zucchini half moons in a bowl with 1 tablespoon of olive oil, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Toss well to coat all pieces.
  • Heat a small skillet on high heat. Let the skillet heat up for about 5 minutes until it gets very hot.
  • Add zucchini to the skillet – it should sizzle loudly once it hits the pan.
  • Cook for about 5-6 minutes until zucchini is well browned. Toss or stir the zucchini about every minute to prevent burning and allow even browning.
  • Serve & enjoy!
