Roasted Tomato Salsa

Make this homemade Roasted Tomato Salsa to change things up a bit! This recipe is fun to make and even more fun to eat. If you are like us, and grow your own tomatoes in the summertime, this recipe is even better! However, Roma tomatoes from the grocery store are just perfect as well.

What youโ€™ll need is: 5 Roma tomatoes, 3 serrano peppers, 1 yellow onion, 1 tomatillo, 1 head of garlic (yes, a whole head), 2 green onions, ยผ cup of cilantro (the stems and leaves), 1 tablespoon of olive oil, 3 tablespoons of water, the juice of one lime, and some salt and pepper.

Start by rinsing and drying all produce. Cut the tomatoes, tomatillo, and onion in half. Cut the top off of the head of garlic and cut the tops off of the serrano peppers. Place all the produce, cut sides down, and head of garlic down on the baking sheet lined with aluminum foil.

Now set your oven to Broil โ€“ High. Yes, we are broiling these ingredients! Broil for 5 to 10 minutes on the middle rack of the oven. Keep a close eye on this the entire time. If ingredients start to get too charred, flip them with some (tasty) tongs or remove them from the baking sheet.

Next, remove baking sheet from oven and place all ingredients into a blender Make sure you remove the garlic cloves from the head of garlic now!! Add 1 tablespoon of olive oil, 3 tablespoons of water, the juice from 1 lime and a large pinch each of salt and pepper. Finish by blending with light pulses in blender until chunky.

Ingredients
  

  • 5 Roma tomatoes
  • 3 serrano peppers

  • 1 tomatillo
  • 1 head of garlic
  • 2 green onions
  • 1/4 cup cilantro (stems and leaves)
  • 1 tablespoon olive oil
  • 3 tablespoons water
  • 1 large pinch salt
  • 1 large pinch pepper
  • juice of 1 lime

Instructions
 

  • Rinse and dry all produce.
  • Cut tomatoes, tomatillo, and onion in half. Separate into pieces.
  • Cut top off the head of garlic. Cut tops off serrano peppers.
  • Place cut sides of produce and head of garlic down on baking sheet lined with aluminum foil.
  • Drizzle olive oil over all ingredients on baking sheet and sprinkle salt and pepper all over.
  • Set oven to broil – high.
  • Place baking sheet on middle rack.
  • Broil for 5-10 minutes, until veggies are charred. Keep a close eye on it the entire time! If things start to get too charred, either flip them or remove them.
  • Remove baking sheet from oven. Remove garlic cloves from head of garlic.
  • Put all ingredients in blender. Add 1 tbsp olive oil. Add salt and pepper. Add lime juice. Blend with light pulses until chunky. Add water to get to desired consistency.
  • Serve!
