Elegant, savory Stuffed Mushrooms recipe you can whip up in under thirty minutes!
Stuffed Mushrooms
Ingredients
- 8 ounce package of whole button or baby bella mushrooms – washed and stemmed (save stems)
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 1/3 package of softened cream cheese (or about 5 tablespoons)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 green onion top, sliced
- 2 teaspoons breadcrumbs
- 2 teaspoons olive oil
Instructions
- Preheat oven to 350 degrees.
- Clean and wash mushrooms thoroughly to remove dirt.
- Carefully remove stems and ribs of mushrooms. Save the stems for later use.
- Set mushrooms on a greased, foil-lined baking sheet
- Finely chop mushroom stems.
- Heat pan on medium heat. When hot, add two teaspoons of olive oil.
- Once shimmering add finely chopped onion, mushroom stems, and minced garlic – season lightly with salt and pepper.
- Cook until softened, about 5-8 minutes. Adjust heat accordingly. – do not burn!
- Once cooked through, remove and put mixture into a bowl.
- Add cream cheese, salt, and pepper to the bowl. Mix and adjust seasoning to taste with salt and/or pepper.
- Stuff each mushroom with mixture and top with a sprinkle of seasoned bread crumbs.
- Bake at 350 for 15-20 minutes until golden brown.
- Let cool for 5 minutes, plate, and sprinkle with green onions.
