Preheat oven to 350 degrees.
Clean and wash mushrooms thoroughly to remove dirt.
Carefully remove stems and ribs of mushrooms. Save the stems for later use.
Set mushrooms on a greased, foil-lined baking sheet
Finely chop mushroom stems.
Heat pan on medium heat. When hot, add two teaspoons of olive oil.
Once shimmering add finely chopped onion, mushroom stems, and minced garlic - season lightly with salt and pepper.
Cook until softened, about 5-8 minutes. Adjust heat accordingly. - do not burn!
Once cooked through, remove and put mixture into a bowl.
Add cream cheese, salt, and pepper to the bowl. Mix and adjust seasoning to taste with salt and/or pepper.
Stuff each mushroom with mixture and top with a sprinkle of seasoned bread crumbs.
Bake at 350 for 15-20 minutes until golden brown.
Let cool for 5 minutes, plate, and sprinkle with green onions.
