Cilantro Lime Rice

Switch up your rice routine tonight with this flavor packed Cilantro Lime Rice recipe! We decided to make this recipe after eating at Chipotle for the thousandth time. They serve cilantro rice and we decided to make our own too. I wouldn’t call this a copycat recipe, just our own take of yummy Cilantro Lime Rice.

This recipe is too easy. First start by measuring out one cup of Jasmine rice and 1 tablespoon of unsalted butter.
Combine these in a saucepan over medium-high heat. Cook the rice and butter and stir constantly for about three minutes. The rice should take on a milky white appearance, but just make sure the butter and rice are fully incorporated. Now add two cups of hot water. Stir the rice and water well, and let it come to a rolling boil. When boiling, cover with a lid, turn heat to low, and let cook for ten minutes or until all the water is absorbed.

Prep the remaining ingredients while the rice is cooking. Zest one whole lime, and slice lime in half. Chop about two heaping tablespoons of cilantro. Set these aside until we add them to the rice.

When the rice has absorbed all of the water, keep the lid on the pan and remove from the heat for five minutes. After five minutes, fluff with a fork and add the zest and cilantro. Squeeze juice from one half of the lime into the rice. Stir to combine.

Ingredients
  

  • 1 cup jasmine rice
  • 1 tablespoon unsalted butter
  • 1 pinch pinch of salt
  • 2 cups hot water
  • zest of 1 lime
  • juice of 1/2 a lime
  • 2 tabelspoons chopped cilantro

Instructions
 

  • Add rice and butter to a medium saucepan over medium-high heat. Cook and stir constantly for 3 minutes, until rice is milky white –
  • Add 2 cups of hot water and a large pinch of salt to the saucepan and stir. Bring to a rolling boil.
  • When the rice is boiling, add the lid to the sauce pan and reduce heat to low. Cook for 10 minutes or until rice has absorbed all water.
  • Remove saucepan from heat. Set aside for 5 minutes with the lid still on.
  • Fluff rice with a fork. Add lime zest, lime juice, and cilantro – stir to combine.
  • Serve!
