For this recipe, we will use fingerling potatoes], but you can use a russet potato as well, just cut them into slices/chunks the size of a halved fingerling potato.
To start, preheat your oven to 400 degrees. Wash and dry the fingerling potatoes, slice in half lengthwise and add to medium sized bowl. Add 1 tablespoon of olive oil, 5 cloves of minced garlic, 2 teaspoons of kosher salt, and 1/4 teaspoon of pepper. Toss well to coat all pieces.
When the oven is preheated and the fingerlings are coated, lay them on a baking sheet lined with aluminum foil. Bake for 25 minutes until golden brown and crispy. Serve with whatever you desire, and enjoy!

Garlic Roasted Potatoes
Ingredients
- 1 bag fingerling potatoes
- 5 garlic cloves, minced
- 1 tablespoon olive oil
- 2 teaspoons kosher salt
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 400 degrees.
- Wash fingerling potatoes. Slice in half, lengthwise. Put into medium sized bowl.
- Add minced garlic, olive oil, kosher salt, and pepper to bowl and toss well to combine.
- Lay on aluminum foil lined baking sheet and bake for 25 minutes.
- Serve and enjoy!
